Celebration Potatoes

We call funeral potatoes in our house Celebration Potatoes.
I do not eat potatoes, but my family does.
Here is the easy recipe I used when I made them last:

Gluten-free and Corn-Free
Celebration Potatoes

Preheat oven to 350 deg.
9 x 13 pan

32 oz Frozen hash Browns or 2 lbs Freshly Shredded potatoes
2 -10 oz containers Cream of something soup
1 Tbsp Dried or 1/4 c fresh onions
16 oz Sour Cream
10 oz Shredded Cheese
1 tsp salt
1/2 tsp ground pepper

1/2 C Parmesan Cheese

Mix all together except Parmesan cheese.
Spread into 9 X 13.
Sprinkle on Parmesan Cheese.
Cover with foil and bake for 30 minutes.
Remove foil and bake an additional 30 min or until brown on top.
